For this one, we start with pork belly, cure it in-house, and slow-smoke it ourselves to create rich, savory, house-made bacon with real depth of flavor. No shortcuts. No pre-made product. Just scratch-made craftsmanship the Towne Lake way.
Then we build it like a classic BLT — only rebuilt into taco form.
The Smoked Pork Belly BLT Taco is topped with:
House-cured, house-smoked pork belly bacon
Fresh shredded romaine
Diced Roma tomatoes
A clean line of mayo
Served in a warm tortilla

What Makes It Different
We cure and season the brisket in-house.
The curing process alone takes 7–10 days before it ever hits the braise.
That means once this batch is gone… it’s gone.
No quick remake.
No “we’ll have more tomorrow.”
When the Reuben Taco runs out, it runs out —
until St. Paddy’s 2027.
